You will need 5 cups Takori sushi rice (Example).

Preparation steps:

  1. Wash the rice thoroughly 4 to 6 times under cold tap water until the drained water becomes “transparent”.

  2. Then let the washed rice dry.

  3. In a pot, add the washed rice with 5 cups of water, with the water to rice ratio being 1:1.

  4. Over medium-high heat, cook the rice until it boils without removing the lid of the pot.

  5. Once the rice boils, reduce the heat to minimum and continue cooking until the water is completely absorbed. The cooking time is about 15 minutes.

  6. Remove the pot from the heat and let the rice rest in the closed pot for 10 to 15 minutes without opening the lid.

  7. Transfer the finished rice into a kitchen container and mix with the prepared seasoning. The amount of seasoning should be 15% more than the amount of raw rice used.

  8. Use a fan or similar device to cool the rice.

  9. Wait until the rice has reached at least room temperature before processing it.


For the seasoning:


  • 1 kg rice vinegar

  • 400g sugar

  • 150g salt

Place the mentioned ingredients in a kitchen container and mix thoroughly until completely dissolved. You can do this process both hot and cold.
